What is MB/Marbling in Beef and What Do They Mean?

Beef marbling 101

Marbling is the fine web of intramuscular fat running through a cut of beef. When it melts during cooking, it bastes the meat from within — bringing juiciness, tenderness and that rich, buttery flavour. In the Australian wagyu grading system, the marble score (MB) measures how much of it there is. The higher the number, the more abundant the marbling.

Wagyu is often sold in bands such as 4/5, 6/7 and 8/9. Here's what each means on the plate.

MB 4/5: everyday indulgence

A moderate amount of marbling that gives noticeably more juiciness and tenderness than standard beef, without being overly rich. It's a great entry point to wagyu and versatile enough for everyday cooking — from stir-fries to steak night.

MB 6/7: the sweet spot

A step up in marbling, flavour and tenderness. MB 6/7 is a favourite of chefs and keen home cooks because it balances richness with a satisfying beefy bite. It shines when grilled or pan-seared, letting the melting fat caramelise on the surface.

MB 8/9: pure luxury

Beef graded MB 8/9 is intensely marbled, with a melt-in-the-mouth texture and deep, buttery flavour. Because it's so rich, smaller portions go a long way — it's ideal for special occasions, thin-sliced yakiniku and shabu shabu, or a show-stopping steak.

Tips for cooking highly marbled beef

  • Cook to medium-rare or medium so the fat melts without the meat drying out.
  • Season simply — salt and pepper are often enough.
  • Higher scores cook faster, so watch the pan closely.
