Ptits Oginons Blancs Fallot (Edmond Fallot small white onions) are considered a premium, gourmet product, which drives their higher price point. They are produced by the renowned French mustard maker, Maison Fallot, a family business in Beaune, Burgundy, that has maintained traditional, high-quality artisanal methods since 1840. 

These onions are not mass-produced in a factory setting but are selected with care and produced by a master mustard maker, often used by top chefs. The small white onions undergo a specialized process where they are first preserved in a candied brine, then rinsed with water to be desalinated before finally being pickled in vinegar.
