Cherry Tomatoes 250g
Fresh Thyme 4 sprigs

Cooking Instructions

  1. Preparation:

    • Preheat the oven to 190°C (375°F).
    • Rinse the whole chicken and pat dry with paper towels.
  2. Seasoning:

    • In a small bowl, mix honey, olive oil, minced garlic, salt, and black pepper.
    • Rub the mixture evenly over the chicken, including under the skin.
    • Stuff the cavity with lemon slices and fresh thyme.
  3. Roasting:

    • Place the chicken on a roasting rack in a baking pan.
    • Brush the chicken with melted butter.
    • Roast in the preheated oven for about 1.5 hours or until the internal temperature reaches 75°C (165°F).
  4. Salad Preparation:

    • While the chicken is roasting, wash and tear the lettuce into bite-sized pieces.
    • Halve the cherry tomatoes.
    • Toss the lettuce and cherry tomatoes together in a serving bowl.
  5. Serving:

    • Let the chicken rest for 10 minutes before carving.
    • Serve the honey roasted chicken with the fresh lettuce and cherry tomatoes.
