Barbecued Pork aka Char Siew

Ingredients         

Iberico Pork Collar 

1 kg
Smashed Garlic 3 cloves
Salt  2 tsp
Sugar           5 tbsp
Light Soy Sauce 1 tbsp
Oyster Sauce 1 tbsp
Dark Soy Sauce  1 tbsp
Sesame Oil 2 tbsp
White Pepper to taste -
Cornflour  1 tbsp

                        

Directions:

1.     Cut pork collar into strips

2.     Mix all seasoning with pork strips and marinate for 4 hours

3.     Place an iron rack in oven and a heat-proof basin containing water under the rack in the oven

4.     Turn on oven temperature to 180°C

5.     Place marinated pork in oven and roast for 10 minutes

6.     Spoon the dropping sauce over the meat

7.     Continue to roast for 15 minutes until the skin turns dark brown

8.     Slice meat to serve
